Join us at Tesoro for an unforgettable four-course dining experience in collaboration with Timber & Tallow. Enjoy an evening of thoughtfully crafted seasonal dishes, locally inspired ingredients, and carefully selected half pours of wine, thoughtfully paired with each course.

The evening begins with a selection of savory smoked bites, bacon-wrapped blue cheese dates, and artisanal charcuterie, followed by a fresh winter harvest salad featuring pear, pomegranate, and whipped goat cheese. For the main course, savor Colorado-raised Mira Flora Wagyu tri-tip, smoked and reverse-seared to perfection, accompanied by golden Pommes Anna potatoes and grilled asparagus. We'll finish the evening with a decadent smoked white chocolate cheesecake topped with a Sweet Heart red wine–cranberry compote.

Each course will be complemented by a small pour of wine selected to enhance the flavors of the dish.
